Komplet lepinja — also called lepinja sa sve (bread with everything) — is the culinary trademark of Uzice. Wood-fired flatbread filled with kajmak, a raw egg and meat drippings, served warm with sour milk.
Komplet lepinja, also known locally as lepinja sa sve (bread with everything), is a beloved street-food specialty that has become the unofficial symbol of Uzice. Simple in ingredients but demanding in technique — it can only be made in a traditional wood-fired oven.
Preparation
A wood-fired flatbread is sliced open and the top removed like a lid. The bottom half is spread with Uzice kajmak (a rich dairy cream) and a raw beaten egg, then slid back into the oven to bake. Once out of the oven, both halves are drizzled with pretop — the drippings collected from roasting meat. It is served warm, traditionally alongside sour milk.
Where to Try It
The most celebrated spot is the bakery Kod Suljage in the Megdan neighbourhood of Uzice, which has even registered the lepinja sa sve as a protected trademark with the Serbian Intellectual Property Office. Other bakeries and burekdzinicas across Uzice offer their own versions, but none can match the original wood-fired oven of Kod Suljage.
